July 9, 2025: IDYLLL unveils a new chapter with its latest tasting menu, a quiet yet confident expression of the restaurant’s evolving philosophy. Created by Chef Uddaloc, the 7-course degustation menu brings together the vibrant soul of Indian flavours and the precision of classical French technique — layered with gentle nods to molecular gastronomy.
Offered in both vegetarian and non-vegetarian options, the menu reflects the chef’s personal journey: from his grounding in French kitchens to his deep connection with Indian ingredients and his time at Farmlore, where an appreciation for soil, seasonality, and innovation shaped his culinary voice.
“No tricks, no trends,” says Chef Uddaloc. “Just the flavours of India I’ve carried with me, served the way I’ve learned to cook: with care, clarity, and a little bit of heart.”
The courses unfold like a story — nostalgic yet restrained, inventive yet grounded — beginning with a Coriander Sphere and Rasam Consommé, before moving into playful takes on chaat, seafood, slow-cooked meats, and sorbet interludes.
